Chef Frédéric Ménager’s organic permaculture farm produces a majority of the products used to craft his authentic, rustic yet luxuriously refined meals, which have been lauded by his peers, including Éric Pras, William Frachot and Bruno Verjus. Food intolerances

Chef Frédéric Ménager is particularly in tune with specialized diets because he is lactose and gluten intolerant. Chef Ménager could not imagine opening his gastronomic restaurant without offering these options to his gourmet clientele. In fact, our Chef’s insight and experience cooking these specialty menus allows him to offer the best alternatives.

A true flexitarian, our chef, farmer and vegetable gardener, Frédéric Ménager is known for his deep respect for nature, dedication to seasonal cooking and looking after the well-being of the heritage breed livestock he raises on his farm. One of the main concepts of his restaurant is to only cook with the animals he has raised on the farm. Chef Ménager changes the menu daily according to the bounty harvested from our organic and sustainable permaculture garden. Even though La Ruchotte® is not a 100% vegetarian restaurant, it definitely is veggie friendly!

A French restaurant designing tailor-made vegan, vegetarian and gluten-free dishes

A chef with the soul of a farmer, Frédéric Ménager’s expert skills in the kitchen and personal dietary restrictions, allow him to easily adjust his dishes to your diet without compromising taste. Frédéric Ménager offers two signature fine dining experiences that are heavily meat based – the Vol-au-Vent® and Le Ragoût de Homard de l’Île de Sein – he reserves these special events for those who can eat meat and suggests those following vegan or vegetarian diets to come enjoy his restaurant’s daily gourmet French lunch menu.

Ingredients and execution

The Ruchotte® is, first and foremost, a joint endeavor centered around human connection. Through his encounters and discoveries, Fred has created a family of suppliers; small often local purveyors who have similar values and a passion for clean, sustainable eating. Fred’s mother forages for mushrooms, his cousin makes the goat cheese and Fred searches the surrounding woods for wild asparagus and bears garlic. His wife Carole is a yoga teacher and devotee of various activities related to well-being. Chef Ménager and Carole even hold holistic events, healing treatments, meditation and Ayurvedic cooking!
