The literal translation for Vol-au-vent is “windblown,” used to describe the light quality of this classic French dish, which consists of a small hollow case of puff pastry filled with either a savory or sweet filling. If you have the chance to embark on Frédéric Ménager’s Vol au Vent® dining experience, you can look forward to a 9-course tasting meal that will have you blown away by its pure decadence. A veritable banquet, that is as refined as it is copious, which will satisfy the appetites of even the most discerning epicureans.

"I had the chance to make the Vol au Vent® several times when I was working at Alain Chapel’s [restaurant]. It is perhaps one of the most beautiful dishes in French cuisine. It’s not the precise measurement of the ingredients that matter for this kind of dish, it’s the quality of the products that makes this dish successful.

It’s a dish that requires you to spend a week chasing after the best veal chop, from the region’s best breeders.

To get up at 4AM to get unpasteurized cream. To drink white wine at 8AM with the fishermen at Philippe’s "Neuf Pond" to get your pike. A dish that requires you to go to the root of each ingredient!"
