Chef Frédéric Ménager creates a new menu daily, designed around the bounty he collects from the fields of his permaculture farm, which encircles his restaurant. Chef Ménager supplements his daily harvest with only the finest products from local purveyors to create a unique menu entitled "La Grande Ruchotte®." Frédéric Ménager decided to enrich his daily menu by creating additional extraordinary dining experience events on certain days throughout the year. These once-in-a-lifetime feasts – which he dubbed the "Vol-au-Vent" and the "Ragout de Homard de l’Île de Sein" - feature ethically-sourced meat and a range of organic produce that combine to create recipes that are beautifully in tune with the seasons, the land and French culinary tradition.
