Fred Ménager: Chef, farmer and vegetable gardener
The organic farm and restaurant La Ruchotte® has gained recognition from the press, specialized restaurant and tourist guides and from some of the greatest French chefs, in part thanks to Frédéric Ménager’s multiple talents, working as our Chef, farmer and vegetable gardener. The name "La Ruchotte®" is what the French call a “Lieu-dit”- a toponymic term for a small geographical area bearing a traditional name. Town hall records indicate that this Leu-dit was registered in 1290, however, it is difficult to say exactly when the farm was built. Frédéric Ménager created the gourmet restaurant in 2001.

The orchard & the vegetable garden
La Ruchotte® Farm is located on a rich limestone plateau in the commune of Bligny sur Ouche, about fifteen kilometers from Beaune. Frédéric has created an almost completely self-sufficient vegetable garden where he grows lettuce, carrots, leeks, radishes, celery, beets, peppers, wild asparagus, peppers, wild bear’s garlic and much more. La Ruchotte’s® orchard is brimming with pear, apple, peach and cherry trees, which Fred planted over a dozen years ago. Today Fred literally reaps what he sowed, using the precious fruit for various desserts and other dishes.
Heritage livestock: counting over 1,500 animals
La Ruchotte® is a unique organic farm and restaurant located in France, where the Chef has taken it upon himself to raise the animals which he uses for his delectable dishes - such as his Noir de Bigorre Pigs and his extraordinary poultry, which are heritage breeds that are particularly prized by France’s greatest Chefs. One of Chef Ménager’s main goals is to revive forgotten, endangered or nearly extinct breeds. As a nature lover, he runs his farm and gardens in a way that promotes biodiversity, demotes standardization and, first and foremost, allows his clients to discover the authentic and often more flavorful bygone breeds. Fred raises heritage breeds of poultry, such as the Barbezieux Chicken and Ardennes Red Turkeys, with the utmost care. Frédéric Ménager is dedicated to providing the very best living conditions for his livestock to ensure their general well-being, feeding them only organic food, giving them space to roam and homeopathic treatments.

Wolfgang and Steve are our dedicated farmhands who work to make sure that La Ruchotte® Farm meets current national standards as well as our exigent Chef’s standards for sustainability. Their varying career paths complement one another, bringing our farm a true vision for the agriculture of tomorrow.
From the organic farm to the restaurant
The bounty produced on Frédéric’s Farm is the number one source of inspiration for his recipes, which are delicately attuned to the seasons as well as the life cycle of his livestock. The dynamic daily menu reflects the chef’s culinary philosophies of using fresh, quality and simple ingredients in inventive ways while respecting the biodiversity of his farm and the welfare of his animals. The exceptional quality and authentic flavors of the vegetables, fruits and meats will bring you the unforgettable gastronomic experience of a lifetime. Special care is given to each animal, vegetable and fruit 365 days a year. The Chef’s ultimate goal is to cook using only the animals he has raised on his farm under the best possible conditions.
The boutique: Purchase organic products from our farm
An increasing number of people have been requesting that Frédéric Ménager make his world more accessible to people that live beyond the borders of Burgundy. Due to a high demand for our products, we have created an online store so that you can purchase products from our organic farm. Chef Ménager decided to widen the breadth of his e-boutique to include products that were not produced at his organic farm restaurant, but which are in line with his founding philosophies, such as his deep respect for nature and seasonality. These products are often small batches of artisan made items crafted by the individuals that make up the "La Ruchotte® Family” - true brothers and sisters whose values align with ours.

Frédéric Ménager’s lauded fine traditional French fare
Trained as a chef, Frédéric Ménager was second-in-command at Alain Chapel’s (three Michelin star chef) restaurant and also worked as Pierre Gragnaire’s roaster (three Michelin star chef). A delicate blend of fine-dining and traditional rustic French fare, Frédéric’s authentic, creative and uncompromising cuisine has received the highest honors. His gourmet, organic farm restaurant has been lauded for its exceptional cuisine, Chef Ménager has received numerous awards and his Michelin star peers as well as the national press cannot stop giving him praise.

A unique daily menu and seasonal products
La Ruchotte® organic farm and restaurant offers a unique daily 5-course menu that changes according to the season. La Ruchotte’s® regular lunch menu is punctuated by gustatory feasts where one can look forward to all manner of decadence. The chef’s signature meal, the Vol-au-Vent®, is an exquisite, unforgettable 9-course tasting menu that has been critically acclaimed by culinary experts and the press. In 2023, Chef Ménager will launch a new 100% organic 4-course menu, the Ragoût de Homard de l’Île de Sein.
